- Making Simple Syrup: To make your own simple syrup, combine equal parts granulated sugar and hot water (e.g., 1 cup sugar, 1 cup water). Stir until the sugar is completely dissolved. Let it cool completely before use. Store any leftovers in an airtight container in the refrigerator for up to 3 weeks.
- Choosing Sparkling Wine: While "Champagne" is in the name, you don't need to use an expensive bottle. A dry (Brut) Prosecco from Italy or Cava from Spain are excellent and more affordable alternatives that work beautifully in this cocktail.
- Batching for a Party: To make a pitcher for about 8 guests, gently muddle about 50 mint leaves with 6 oz (180ml) of lime juice and 4 oz (120ml) of simple syrup in a large pitcher. Add 12 oz (360ml) of white rum and stir. Chill the base mixture for up to two hours. When ready to serve, fill individual glasses with ice, pour the base mixture into each glass, and then top with a full bottle (750ml) of chilled sparkling wine.
